- 4 boneless, skinless chicken breasts
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp olive oil
- 3 cloves garlic, minced
- 1 cup chicken broth
- 3/4 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/2 cup sun-dried tomatoes (in oil), drained and chopped
- 1 tsp Italian seasoning
- 1/4 tsp red pepper flakes (optional)
- Fresh basil, chopped (for garnish)
Instructions
- Season chicken breasts with salt and pepper on both sides.
- Heat olive oil in a large skillet over medium-high heat. Sear chicken for 4–5 minutes per side, until golden and cooked through. Remove and set aside.
- In the same skillet, add garlic and sauté for 30 seconds until fragrant.
- Pour in chicken broth and stir, scraping up any browned bits from the bottom of the pan.
- Add heavy cream, Parmesan, sun-dried tomatoes, Italian seasoning, and red pepper flakes. Stir to combine and let simmer for 3–5 minutes until slightly thickened.
- Return chicken to the skillet and spoon sauce over it. Simmer for another 5–7 minutes until the chicken is heated through and the sauce has thickened to your liking.
- Garnish with chopped basil and serve hot over pasta, rice, or with crusty bread.
Notes
- For extra flavor, marinate the chicken in Italian dressing for 30 minutes before cooking.
- Use freshly grated Parmesan for the best texture and flavor.
- Can be made with chicken thighs if preferred.
