Instructions
- Make the Brown Butter: In a small saucepan, melt 1/4 cup unsalted butter over medium heat. Continue cooking for 4-5 minutes, swirling the pan occasionally, until the butter turns a golden-brown color and emits a nutty aroma. Remove from heat and set aside to cool slightly.
- Cook the Potatoes: Place the peeled and chopped Yukon Gold potatoes into a large pot and cover them with cold water. Add a pinch of salt and bring to a boil over high heat. Once boiling, reduce the heat and simmer for 15-20 minutes or until the potatoes are fork-tender.
- Whip the Potatoes: Drain the cooked potatoes thoroughly and return them to the pot. Add the 1/2 cup heavy cream and use a potato masher or a hand mixer to mash the potatoes until smooth and creamy.
- Add Cheese & Butter: Stir in the grated Manchego cheese, prepared brown butter, and 4 tablespoons unsalted butter. Continue mixing until everything is well incorporated and the potatoes are fluffy and creamy.
- Season and Serve: Season with salt and freshly ground black pepper to taste. Transfer the whipped potatoes to a serving dish and garnish with fresh chives if desired. Serve immediately while warm.
