Description

Magnolia Bakery’s Blueberry Jamboree is a delightful layered dessert featuring a buttery pecan crust, creamy vanilla-infused cream cheese filling, and a sweet-tart fresh blueberry topping. Perfect for summer gatherings or as an elegant treat, this recipe combines baking for the crust with stovetop cooking for the blueberry topping and no-bake assembly.

Ingredients

Scale

For the crust:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter, melted
  • 1 cup chopped pecans

For the blueberry topping:

  • 3 cups fresh or frozen blueberries
  • 1/2 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch

For the cream cheese filling:

  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 1/2 cups heavy cream
  • 1 teaspoon vanilla extract

Instructions

  1. Make the crust: Preheat the oven to 350°F (175°C). In a bowl, mix together the all-purpose flour, melted unsalted butter, and chopped pecans until combined. Press this mixture firmly into the bottom of a 9×13-inch baking dish, creating an even layer. Bake in the preheated oven for 15 to 18 minutes or until the crust is golden brown. Remove from oven and allow to cool completely before assembling the dessert.
  2. Prepare the blueberry topping: In a medium saucepan over medium heat, combine fresh or frozen blueberries, granulated sugar, lemon juice, and cornstarch. Stir frequently as the mixture cooks, allowing the blueberries to break down and the sauce to thicken, about 8 to 10 minutes. Once thickened, remove the saucepan from heat and let the mixture cool to room temperature.
  3. Make the cream cheese filling: In a large bowl, beat the softened cream cheese together with powdered sugar until the mixture is smooth and creamy. In a separate bowl, whip the heavy cream with vanilla extract until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture, combining carefully to maintain a light and fluffy texture.
  4. Assemble the dessert: Spread the cream cheese filling evenly over the cooled pecan crust layer. Spoon the cooled blueberry topping over the cream filling and spread gently to cover the surface thoroughly. Chill the assembled dessert in the refrigerator for at least 2 hours to allow it to set firmly before serving.

Notes

  • This dessert can be prepared a day ahead and stored in the refrigerator for convenience.
  • For neater, cleaner slices, chill the dessert overnight before cutting and serving.
  • If fresh blueberries are not available, frozen blueberries work well as a substitute.
  • Ensure the cream cheese is fully softened for a smoother filling texture.
