Description

Linzer Cookies are delicate sandwich cookies made with buttery almond dough and filled with sweet raspberry jam, traditionally finished with a dusting of powdered sugar.


Ingredients

  • 1 cup unsalted butter, softened
  • 2/3 cup granulated sugar
  • 2 large egg yolks
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1 1/3 cups almond flour
  • 2 cups all-purpose flour
  • 1/2 cup raspberry jam
  • Powdered sugar, for dusting

Instructions

  1. In a large bowl, cream the butter and sugar until light and fluffy.
  2. Mix in egg yolks, vanilla extract, and salt until well combined.
  3. Add almond flour and mix until incorporated.
  4. Gradually add all-purpose flour and mix until a soft dough forms.
  5. Divide the dough in half, flatten into disks, wrap in plastic, and chill for at least 1 hour.
  6. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  7. Roll out the dough to about 1/8 inch thickness and cut out cookies using a round cutter. Use a smaller cutter to cut a shape out of half the cookies (these will be the tops).
  8. Place cookies on prepared baking sheets and bake for 10–12 minutes, or until edges are lightly golden. Cool completely.
  9. Spread a small amount of raspberry jam on the bottom halves of the cookies. Top with the cutout cookies.
  10. Dust the tops with powdered sugar before serving.

Notes

  • Almond flour gives Linzer cookies their signature nutty flavor—don’t substitute with regular flour.
  • Make sure cookies are completely cooled before assembling to prevent jam from melting.
  • You can use other jams like apricot or strawberry if desired.
