Scale
- 1 cup unsalted butter, softened
- 2/3 cup granulated sugar
- 2 large egg yolks
- 1 tsp vanilla extract
- 1/4 tsp salt
- 1 1/3 cups almond flour
- 2 cups all-purpose flour
- 1/2 cup raspberry jam
- Powdered sugar, for dusting
Instructions
- In a large bowl, cream the butter and sugar until light and fluffy.
- Mix in egg yolks, vanilla extract, and salt until well combined.
- Add almond flour and mix until incorporated.
- Gradually add all-purpose flour and mix until a soft dough forms.
- Divide the dough in half, flatten into disks, wrap in plastic, and chill for at least 1 hour.
- Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
- Roll out the dough to about 1/8 inch thickness and cut out cookies using a round cutter. Use a smaller cutter to cut a shape out of half the cookies (these will be the tops).
- Place cookies on prepared baking sheets and bake for 10–12 minutes, or until edges are lightly golden. Cool completely.
- Spread a small amount of raspberry jam on the bottom halves of the cookies. Top with the cutout cookies.
- Dust the tops with powdered sugar before serving.
Notes
- Almond flour gives Linzer cookies their signature nutty flavor—don’t substitute with regular flour.
- Make sure cookies are completely cooled before assembling to prevent jam from melting.
- You can use other jams like apricot or strawberry if desired.
