Ingredients
- 1/4 cup fresh lemon juice (about 2 lemons)
- 1/2 cup extra virgin olive oil
- 1 teaspoon Dijon mustard
- 1 teaspoon honey (optional for sweetness)
- 1 garlic clove, minced
- Salt to taste
- Freshly ground black pepper to taste
Instructions
- In a small bowl or jar, combine the lemon juice, Dijon mustard, honey (if using), and minced garlic.
- Slowly drizzle in the olive oil while whisking continuously to emulsify the dressing.
- Season with salt and freshly ground black pepper to taste.
- Whisk again or shake the jar until well combined.
- Use immediately or store in the refrigerator for up to 1 week.
