Description
A zesty twist on the classic hummus, Lemon Hummus is creamy, tangy, and perfect for dipping or spreading.
Ingredients
- 1 can (15 oz) chickpeas, drained and rinsed
- 1/4 cup fresh lemon juice (about 1 large lemon)
- 1/4 cup tahini
- 1 small garlic clove, minced
- 2 tablespoons olive oil
- 1/2 teaspoon ground cumin
- 1/2 teaspoon salt
- 2 to 3 tablespoons water
- Zest of 1 lemon
Instructions
- In a food processor, combine tahini and lemon juice. Process for 1 minute until smooth and creamy.
- Add the minced garlic, olive oil, cumin, and salt. Process for 30 seconds.
- Add the chickpeas and process for 1 minute. Scrape down sides and process another 1-2 minutes until smooth.
- While processing, slowly add water until desired consistency is reached.
- Stir in lemon zest and adjust seasoning to taste.
- Transfer to a serving bowl and drizzle with extra olive oil if desired.
Notes
- For a smoother texture, peel the chickpeas before blending.
- Add more lemon juice for an extra tangy flavor.
- Store in an airtight container in the refrigerator for up to a week.
