Description

These lemon cookies are soft, chewy, and bursting with fresh lemon flavor. Perfect for a refreshing treat any time of the year.


Ingredients

  • 1 cup granulated sugar
  • 1 large egg
  • 1 tablespoon lemon zest
  • 2 tablespoons fresh lemon juice
  • 1/2 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup powdered sugar (for rolling)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the butter and granulated sugar until light and fluffy.
  3. Add the egg, lemon zest, lemon juice, and vanilla extract. Mix until well combined.
  4. In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Chill the dough for 30 minutes in the refrigerator.
  7. Scoop tablespoon-sized amounts of dough and roll into balls. Roll each ball in powdered sugar.
  8. Place the dough balls onto the prepared baking sheet, spacing them 2 inches apart.
  9. Bake for 10-12 minutes, or until the edges are set and the tops have a crinkled appearance.
  10. Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

  • For extra lemon flavor, add a few drops of lemon extract.
  • Cookies can be stored in an airtight container for up to 5 days.
  • You can freeze the dough balls before baking for up to 3 months.
