- 1 tablespoon lemon zest

- 1/4 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 cup powdered sugar (for rolling)
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together the butter and granulated sugar until light and fluffy.
- Add the egg, lemon zest, lemon juice, and vanilla extract. Mix until well combined.
- In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Chill the dough for 30 minutes in the refrigerator.
- Scoop tablespoon-sized amounts of dough and roll into balls. Roll each ball in powdered sugar.
- Place the dough balls onto the prepared baking sheet, spacing them 2 inches apart.
- Bake for 10-12 minutes, or until the edges are set and the tops have a crinkled appearance.
- Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
- For extra lemon flavor, add a few drops of lemon extract.
- Cookies can be stored in an airtight container for up to 5 days.
- You can freeze the dough balls before baking for up to 3 months.
