Ingredients
Scale
Pasta
- 8 oz fettuccine or linguine pasta
Vegetables
- 2 medium zucchinis, spiralized or julienned
- 2 cloves garlic, minced
Sauce
- 1 tablespoon olive oil
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 tablespoon fresh lemon juice
- 1 teaspoon lemon zest
- Salt and black pepper to taste
- 1/4 cup fresh basil, chopped
Instructions
- Cook Pasta: Cook the fettuccine or linguine pasta according to the package directions until al dente. Drain the pasta while reserving 1/4 cup of the pasta water to use later in the sauce.
- Sauté Garlic and Zucchini: Heat the olive oil in a large skillet over medium heat. Add the minced garlic and cook for about 30 seconds until fragrant. Add the spiralized or julienned zucchini and sauté for 2 to 3 minutes until the zucchini is slightly tender but still has some bite.
- Make the Alfredo Sauce: Pour in the heavy cream and bring it to a gentle simmer. Stir in the grated Parmesan cheese, fresh lemon juice, lemon zest, salt, and black pepper. Continue stirring until the cheese is fully melted and the sauce becomes creamy and smooth.
- Toss Pasta with Sauce: Add the cooked pasta to the skillet and toss everything together to coat the noodles evenly with the sauce. If needed, add the reserved pasta water a little at a time to loosen the sauce to your preferred consistency.
- Finish with Basil and Serve: Remove the skillet from heat and stir in the chopped fresh basil. Serve the pasta warm, garnished with additional Parmesan cheese if desired.
Notes
- For a lighter dish, use a mix of zucchini noodles and traditional pasta.
- Add grilled chicken or shrimp to boost protein content.
- Avoid overcooking zucchini to maintain a nice texture.
- Freshly grated Parmesan cheese melts best for a smooth sauce.
