Salmon Rolls
- 2 skinless salmon fillets (about 8 oz)
- 2 large flour tortillas

- 2 tbsp freshly squeezed lemon juice
- 1/4 cup fresh basil leaves, chopped
- Salt and pepper to taste
Instructions
- Preheat the oven: Preheat your oven to 375°F (190°C) to prepare for baking the salmon rolls.
- Prepare the cream cheese mixture: In a bowl, mix the softened cream cheese with freshly squeezed lemon juice until smooth. Stir in the chopped fresh basil, and season with salt and pepper to taste for a flavorful spread.
- Spread mixture on tortillas: Evenly spread the cream cheese mixture onto each flour tortilla, leaving about an inch of space around the edges to allow for rolling.
- Add the salmon: Place the skinless salmon fillet slices evenly over the cream cheese on each tortilla to ensure every bite has salmon.
- Roll the tortillas: Carefully roll the tortillas tightly from one end to the other, making sure they stay compact. Place them seam-side down on a baking sheet lined with parchment paper to keep them intact while baking.
- Drizzle and bake: Lightly drizzle olive oil over the rolled tortillas. Bake in the preheated oven for 15-20 minutes until the rolls are golden brown and heated through.
