- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 2 large egg yolks
- 1 can (14 oz) sweetened condensed milk
- 1/2 cup key lime juice (fresh or bottled)
- 1 tablespoon key lime zest
- Whipped cream, for topping (optional)
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving an overhang for easy removal.
- In a medium bowl, mix graham cracker crumbs, sugar, and melted butter until combined. Press the mixture firmly into the bottom of the prepared pan.
- Bake crust for 10 minutes, then remove from oven and let it cool slightly.
- In another bowl, whisk together egg yolks, sweetened condensed milk, key lime juice, and lime zest until smooth and well combined.
- Pour the filling over the cooled crust and smooth the top.
- Bake for 15-18 minutes, or until the filling is set but slightly jiggly in the center.
- Let the bars cool to room temperature, then refrigerate for at least 2 hours or until fully chilled.
- Once chilled, lift the bars out using the parchment paper and slice into squares. Top with whipped cream if desired.

- Use fresh key lime juice for the best flavor, but bottled works in a pinch.
- Chilling the bars is essential for clean slicing and best texture.
- You can double the recipe for a 9×13-inch pan.
