Description

These tangy and sweet Key Lime Pie Bars are a refreshing dessert with a buttery graham cracker crust and a creamy lime filling, perfect for any occasion.

Ingredients

Units Scale
  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 2 large egg yolks
  • 1 can (14 oz) sweetened condensed milk
  • 1/2 cup key lime juice (fresh or bottled)
  • 1 tablespoon key lime zest
  • Whipped cream, for topping (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. In a medium bowl, mix graham cracker crumbs, sugar, and melted butter until combined. Press the mixture firmly into the bottom of the prepared pan.
  3. Bake crust for 10 minutes, then remove from oven and let it cool slightly.
  4. In another bowl, whisk together egg yolks, sweetened condensed milk, key lime juice, and lime zest until smooth and well combined.
  5. Pour the filling over the cooled crust and smooth the top.
  6. Bake for 15-18 minutes, or until the filling is set but slightly jiggly in the center.
  7. Let the bars cool to room temperature, then refrigerate for at least 2 hours or until fully chilled.
  8. Once chilled, lift the bars out using the parchment paper and slice into squares. Top with whipped cream if desired.

Notes

  • Use fresh key lime juice for the best flavor, but bottled works in a pinch.
  • Chilling the bars is essential for clean slicing and best texture.
  • You can double the recipe for a 9×13-inch pan.
