Keto Peanut Butter Cookies are soft, chewy, and loaded with peanut butter flavor while staying low in carbs and sugar-free. They’re quick to make and perfect for a guilt-free keto snack or dessert.
Ingredients
- 1 cup natural peanut butter (unsweetened)
- 1/2 cup erythritol or other keto-friendly sweetener
- 1 tsp sugar-free vanilla extract
- 1 large egg
- 1/4 tsp salt
- 1/2 tsp baking powder
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine peanut butter, erythritol, vanilla extract, egg, salt, and baking powder.
- Mix until smooth and fully combined.
- Scoop tablespoon-sized portions and roll into balls.
- Place on the prepared baking sheet and flatten each ball with a fork to create a crisscross pattern.
- Bake for 10-12 minutes or until edges are lightly golden.
- Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
