Description

Keto Peanut Butter Cookies are soft, chewy, and loaded with peanut butter flavor while staying low in carbs and sugar-free. They’re quick to make and perfect for a guilt-free keto snack or dessert.

Ingredients

  • 1 cup natural peanut butter (unsweetened)
  • 1/2 cup erythritol or other keto-friendly sweetener
  • 1 tsp sugar-free vanilla extract
  • 1 large egg
  • 1/4 tsp salt
  • 1/2 tsp baking powder

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine peanut butter, erythritol, vanilla extract, egg, salt, and baking powder.
  3. Mix until smooth and fully combined.
  4. Scoop tablespoon-sized portions and roll into balls.
  5. Place on the prepared baking sheet and flatten each ball with a fork to create a crisscross pattern.
  6. Bake for 10-12 minutes or until edges are lightly golden.
  7. Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

  • Add sugar-free chocolate chips for extra indulgence.
  • Use almond butter instead of peanut butter for a flavor twist.
  • Dip half of each cookie in melted keto-friendly dark chocolate for a treat.
  • Store in an airtight container at room temperature for up to 5 days, refrigerate for up to 2 weeks, or freeze for up to 3 months.
