Description

These Keto No-Bake Churro Cheesecake Bars are a delicious, low-carb dessert featuring a cinnamon-spiced almond flour crust and a creamy cheesecake filling topped with a cinnamon-erythritol sprinkle. Perfect for keto and gluten-free diets, they’re easy to prepare and require no baking, making them a quick yet indulgent treat.

Ingredients

Scale

For the crust:

  • 1 1/2 cups almond flour
  • 1/4 cup granulated erythritol
  • 1/2 teaspoon cinnamon
  • 1/4 cup unsalted butter, melted

For the filling:

  • 16 oz cream cheese, softened
  • 1/2 cup powdered erythritol
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1 cup heavy whipping cream

For the topping:

  • 2 tablespoons granulated erythritol
  • 1/2 teaspoon cinnamon

Instructions

  1. Prepare the crust: In a medium bowl, mix together almond flour, granulated erythritol, cinnamon, and melted butter until the mixture is evenly combined. Firmly press this crust mixture into the bottom of an 8×8-inch pan lined with parchment paper. Place the crust in the refrigerator to chill while you prepare the filling.
  2. Make the filling: In a large bowl, beat the softened cream cheese, powdered erythritol, vanilla extract, and cinnamon until smooth and creamy. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture, combining thoroughly but keeping the mixture light and airy. Spread this filling evenly over the chilled crust.
  3. Add topping and chill: Combine the granulated erythritol and cinnamon in a small bowl. Sprinkle this cinnamon-erythritol mixture evenly over the cheesecake filling. Cover the pan and refrigerate the bars for at least 4 hours, or until they are fully set.
  4. Serve: Once set, slice into 9 bars and serve chilled. For an extra indulgent touch, drizzle with sugar-free caramel sauce before serving if desired.

Notes

  • The bars can be prepared up to 3 days in advance and kept refrigerated.
  • For added decadence, drizzle sugar-free caramel sauce just before serving.
  • Ensure the cream cheese is softened for easy mixing and a smooth filling.
  • Use parchment paper to prevent sticking and make removal easier.
