Description

Huntington Chicken Casserole is a creamy, cheesy, and comforting dish layering tender chicken, seasoned pasta, and a savory creamy base—perfect for family dinners or potlucks.

Ingredients

  • 3 cups cooked chicken, shredded or cubed
  • 2 cups cooked egg noodles or pasta of choice
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup sour cream or Greek yogurt
  • 1 cup shredded cheddar cheese (plus extra for topping)
  • 1/2 cup milk
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste
  • Optional: 1/2 cup chopped green onions or peas

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. In a large bowl, combine chicken, cooked pasta, cream of mushroom soup, cream of chicken soup, sour cream, 1 cup cheddar, milk, garlic powder, onion powder, salt, and pepper. Stir until well mixed.
  3. Fold in green onions or peas if using.
  4. Spread mixture evenly into the prepared baking dish. Sprinkle extra cheddar on top.
  5. Bake for 25–30 minutes until bubbly and cheese is melted and golden.
  6. Let rest for 5 minutes before serving.

Notes

  • Use leftover rotisserie chicken to save time.
  • Substitute Greek yogurt for sour cream for a lighter version.
  • Add broccoli florets or mushrooms to boost nutrition.
  • Make ahead: assemble, cover, refrigerate overnight, and bake the next day (add 5–10 minutes to bake time).
