Ingredients
- 4 large eggs
- 2 Tbsp milk, cream, or water (optional for extra fluffiness)
- ½ Tbsp unsalted butter
- ¼ tsp salt (or to taste)
- Pinch of black pepper (optional)
Instructions
- Crack eggs into a bowl. Add salt and optional milk/cream. Whisk vigorously for about 1 minute until light and foamy.
- Heat a non-stick skillet over medium-low heat and melt butter until foamy but not browned.
- Pour in the eggs and let them sit undisturbed for a few seconds until they just begin to set.
- Using a silicone spatula, gently stir from the edges toward the center, forming soft curds.
- Continue gently stirring and folding until eggs are mostly set but still slightly glossy and moist.
- Remove from heat and let the residual heat finish cooking them (carryover cooking).
- Season with pepper if desired and serve immediately.
Notes
