Ingredients
Scale
For the Beef Mixture
- 1 lb ground beef
- 1 packet taco seasoning mix
- 1/2 cup water
For the Base and Toppings
- 1 can (16 oz) refried beans
- 1/2 cup enchilada sauce (or taco sauce)
- 1 cup shredded Mexican blend cheese
- 8 small flour tortillas (6-inch)
- Vegetable oil for frying
For Garnish
- 1/4 cup chopped tomatoes
- 2 tablespoons sliced black olives (optional)
- 2 green onions, sliced
Instructions
- Brown the Beef: In a skillet over medium heat, cook the ground beef until no longer pink. Drain off any excess fat to keep the mixture from being greasy.
- Season the Beef: Add the taco seasoning mix and 1/2 cup water to the browned beef. Simmer for 5 to 7 minutes, stirring occasionally, until the mixture thickens. Set aside.
- Fry the Tortillas: In another skillet, heat a small amount of vegetable oil over medium heat. Lightly fry each tortilla until crispy and golden on both sides. Drain the fried tortillas on paper towels to remove excess oil.
- Warm the Refried Beans: Heat the refried beans in a saucepan or in the microwave until they become soft and spreadable.
- Assemble the Base: Place one fried tortilla on a baking sheet. Spread a layer of the warm refried beans over it, then spoon the seasoned beef mixture on top. Place a second tortilla on top.
- Add Sauce and Cheese: Spoon enchilada or taco sauce over the top tortilla and sprinkle generously with shredded Mexican blend cheese.
- Bake the Pizzas: Repeat the assembly with the remaining ingredients to make 4 pizzas. Bake them in a preheated oven at 400°F (200°C) for 8 to 10 minutes, or until the cheese is melted, bubbly, and lightly browned.
- Garnish and Serve: Remove pizzas from the oven. Top with chopped tomatoes, sliced black olives (if using), and sliced green onions. Slice into portions and serve hot for a delicious meal.
Notes
- Use flour tortillas approximately 6 inches in diameter for a perfect pizza base size.
- For a vegetarian option, substitute the ground beef with cooked black beans or a plant-based meat substitute.
- If you prefer a spicier pizza, add jalapeños or hot sauce as a topping.
- Drain excess fat after browning ground beef to avoid greasy filling.
- Ensure tortillas are crispy before assembling to prevent sogginess after baking.
- Cheese melts best when pizzas are baked until bubbly; avoid overcooking.
