- 1/2 cup plain Greek yogurt
- 1 scoop vanilla protein powder
- 2 tablespoons honey or maple syrup
- 1/2 teaspoon vanilla extract
- 1/2 cup crushed graham crackers
- 1 tablespoon melted coconut oil
- 1 cup fresh strawberries, chopped
- Silicone mini muffin mold or liners
Instructions
- In a food processor, blend cottage cheese, Greek yogurt, protein powder, honey, and vanilla extract until smooth and creamy.
- In a separate bowl, mix crushed graham crackers with melted coconut oil to form a crumbly base mixture.
- Place a small spoonful of the graham cracker mixture into each muffin liner and press down firmly to form the crust.
- Pour the cheesecake mixture over the crust layer in each mold.
- Top with chopped fresh strawberries.
- Place the molds in the freezer for 2-3 hours or until firm.
- Let sit at room temperature for 5-10 minutes before serving for best texture.
