Description

These high protein healthy strawberry cheesecake bites are a delicious and nutritious snack or dessert, perfect for satisfying your sweet tooth while staying on track with your fitness goals.


Ingredients

  • 1 cup low-fat cottage cheese
  • 1/2 cup plain Greek yogurt
  • 1 scoop vanilla protein powder
  • 2 tablespoons honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/2 cup crushed graham crackers
  • 1 tablespoon melted coconut oil
  • 1 cup fresh strawberries, chopped
  • Silicone mini muffin mold or liners

Instructions

  1. In a food processor, blend cottage cheese, Greek yogurt, protein powder, honey, and vanilla extract until smooth and creamy.
  2. In a separate bowl, mix crushed graham crackers with melted coconut oil to form a crumbly base mixture.
  3. Place a small spoonful of the graham cracker mixture into each muffin liner and press down firmly to form the crust.
  4. Pour the cheesecake mixture over the crust layer in each mold.
  5. Top with chopped fresh strawberries.
  6. Place the molds in the freezer for 2-3 hours or until firm.
