- 1 tbsp fresh cilantro (chopped)
- 1 tbsp lime juice
- Salt & pepper to taste
Dipping Sauce
- ¼ cup Greek yogurt or sour cream
- ½ tsp garlic powder
- ½ tsp dried dill
- ½ tsp lemon juice
- Salt & pepper to taste
Instructions
- Prepare the Sweet Potato Fries: Preheat your oven to 400°F (200°C). In a large bowl, toss the cut sweet potato fries with olive oil, paprika, garlic powder, salt, and black pepper to coat them evenly. Spread the fries in a single layer on a baking sheet and bake for 25 to 30 minutes, flipping halfway through to ensure they become golden and crispy on all sides.
- Marinate & Grill the Chicken: In a bowl, combine olive oil, garlic powder, onion powder, paprika, dried oregano, salt, black pepper, fresh parsley, and lemon juice to create the marinade. Coat the chicken tenders thoroughly in the marinade and let them sit for 10 minutes to absorb the flavors. Preheat your grill to medium heat and cook the chicken tenders for 5 to 7 minutes on each side until they are fully cooked through and have a nicely golden brown exterior.
- Make the Avocado Salsa: In a mixing bowl, gently combine the diced avocado, halved cherry tomatoes, finely chopped red onion, fresh cilantro, lime juice, salt, and pepper. Toss carefully to mix without mashing the avocado, creating a fresh and vibrant salsa.
- Prepare the Dipping Sauce: In a small bowl, mix the Greek yogurt or sour cream with garlic powder, dried dill, lemon juice, and salt and pepper to taste. Chill the sauce in the refrigerator until you are ready to serve to enhance the flavors.
- Assemble & Serve: Arrange the grilled chicken tenders on plates alongside the crispy sweet potato fries and a generous serving of avocado salsa. Add a small bowl of the tangy garlic-dill dipping sauce on the side for dipping. Enjoy your balanced and delicious meal.
Notes
- Ensure to flip the sweet potato fries halfway through baking to get an even crispness.
- Allowing the chicken to marinate enhances the flavor and tenderness.
- Avocado salsa is best served fresh; prepare it just before serving to avoid browning.
- For a dairy-free dipping sauce alternative, substitute Greek yogurt with a plant-based yogurt.
- Adjust seasoning and spice levels according to your taste preference.
