Description

These Gooey Chocolate Cherry Muffins combine rich cocoa and semi-sweet chocolate chips with juicy cherries for a decadent and moist treat. Perfectly balanced with a tender crumb and a burst of fruit, these muffins offer a delightful dessert or indulgent snack that’s best enjoyed warm.

Ingredients

Scale

Dry Ingredients

  • 1 3/4 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar

Wet Ingredients

  • 2 large eggs
  • 3/4 cup milk
  • 1/2 cup unsalted butter, melted and cooled
  • 1 teaspoon vanilla extract

Mix-ins

  • 1 1/2 cups pitted cherries (fresh or frozen, halved)
  • 3/4 cup semi-sweet chocolate chips

Instructions

  1. Preheat Oven and Prepare Muffin Tin: Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or lightly grease each cup to prevent sticking.
  2. Mix Dry Ingredients: In a large bowl, whisk together the all-purpose flour, unsweetened cocoa powder, baking powder, and salt to ensure an even distribution of leavening and flavor.
  3. Combine Wet Ingredients: In a separate bowl, whisk the eggs, milk, melted and cooled butter, vanilla extract, granulated sugar, and brown sugar together until the mixture is smooth and well combined.
  4. Incorporate Wet into Dry: Pour the wet ingredients into the bowl with the dry ingredients. Stir carefully until just combined; avoid overmixing to keep the muffins tender.
  5. Add Cherries and Chocolate Chips: Gently fold in the pitted cherries and semi-sweet chocolate chips, making sure they are evenly distributed but without overworking the batter.
  6. Fill Muffin Cups: Divide the batter evenly among the muffin cups, filling each about 3/4 full to allow room for rising.
  7. Bake Muffins: Place in the preheated oven and bake for 18 to 22 minutes, or until a toothpick inserted into the center of a muffin comes out with a few moist crumbs.
  8. Cool and Serve: Let the muffins cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely. Serve slightly warm to enjoy the gooey texture.

Notes

  • If using frozen cherries, add them directly to the batter without thawing to prevent excess moisture from affecting the texture.
  • For the best gooey texture, serve muffins warm. They can be reheated in the microwave for 10–15 seconds.
