Ingredients
Scale
For the Steak Bites:
- 1 1/2 pounds sirloin or ribeye steak, cut into 1-inch cubes
- Salt and black pepper to taste
- 1 tablespoon olive oil
- 3 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 tablespoon chopped fresh parsley (optional)
For the Mashed Potatoes:
- 2 pounds Yukon Gold potatoes, peeled and cubed
- 1/2 cup whole milk, warmed
- 1/4 cup sour cream
- 3 tablespoons butter
- Salt and pepper to taste
For the Green Beans:
- 12 ounces fresh green beans, trimmed
- 1 tablespoon olive oil or butter
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions
- Make the Mashed Potatoes: Bring a large pot of salted water to a boil. Add the cubed potatoes and cook for 15–18 minutes until fork-tender. Drain the potatoes and return them to the pot. Add the warm milk, sour cream, butter, salt, and pepper. Mash everything until smooth and creamy. Cover to keep warm while preparing the rest of the meal.
- Cook the Green Beans: Heat olive oil or butter in a skillet over medium heat. Add the trimmed green beans and sauté for 5–6 minutes until they begin to soften. Add the minced garlic, season with salt and pepper, and cook for another 1–2 minutes, until the green beans are tender but retain a slight crispness. Remove from heat and set aside.
- Prepare the Steak Bites: Pat the steak cubes dry using paper towels and season generously with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Arrange the steak cubes in a single layer (working in batches if needed) and sear them for 1–2 minutes per side until nicely browned but still juicy inside. Reduce the heat to medium, add butter and minced garlic to the skillet, and stir the steak bites for 1–2 minutes to coat them in the aromatic garlic butter. Remove from heat and sprinkle with optional fresh parsley.
- To Serve: Plate a scoop of creamy mashed potatoes alongside a serving of sautéed green beans. Top with the garlic butter steak bites and drizzle any remaining garlic butter from the pan over the entire dish for extra flavor.
Notes
- For an extra depth of flavor, marinate the steak briefly in Worcestershire sauce and garlic before cooking.
- You can swap Yukon Gold potatoes with russet or red potatoes depending on your preference.
