Ingredients
Scale
For the Potatoes
- ¼ cup ghee or butter, divided
- 1 tablespoon olive oil
- 1 lb Yukon gold potatoes, cut into ½ inch cubes
- 3 garlic cloves, minced
- 1 teaspoon dried thyme
- ½ teaspoon dried oregano
- ½ teaspoon sea salt, plus more to taste
- ¼ teaspoon ground black pepper, plus more to taste
For the Steak
- 1 ¼ lb sirloin steak, cut into ½ inch cubes
- Additional ghee or butter for cooking (about 1-2 tablespoons)
- Salt and pepper to season
- Fresh parsley, chopped, for garnish (optional)
Instructions
- Cook the Potatoes: Heat a large cast iron skillet over medium heat. Add olive oil and 2 tablespoons of ghee. Once melted and hot, add the cubed Yukon gold potatoes along with minced garlic, dried thyme, dried oregano, sea salt, and ground black pepper. Cook, stirring occasionally, until the potatoes are golden brown and tender, about 15-18 minutes.
- Sear the Steak: Increase the heat to medium-high. Add additional ghee or butter to the skillet. Season the steak cubes generously with salt and pepper, then add them to the skillet. Cook the steak pieces until they develop a golden brown crust on all sides and reach your desired level of doneness, about 3-5 minutes depending on size and preference.
- Combine and Serve: Return the cooked potatoes to the skillet with the steak bites, mixing them together to blend flavors. Taste and adjust seasoning with additional salt and pepper if needed. Garnish with freshly chopped parsley if desired, and serve immediately while hot.
Notes
- Use a cast iron skillet for the best sear and even cooking of both steak and potatoes.
- Yukon gold potatoes are preferred for their creamy texture and ability to crisp nicely.
- Adjust garlic and herbs according to your taste preferences.
- For medium-rare steak, cook for about 3 minutes per side; adjust based on thickness and personal preference.
- Fresh parsley adds a nice color contrast and fresh flavor but is optional.
- Make sure not to overcrowd the pan when searing the steak, cook in batches if necessary.
