Description

This Galaxy Ripple Ice Cream Cake is a luscious no-bake dessert combining a crunchy chocolate cookie crust with creamy vanilla ice cream studded with chopped Galaxy Ripple chocolate bars. Layers of caramel and chocolate sauce add decadent sweetness, topped optionally with whipped cream and chocolate curls for a festive finish. Perfect for ice cream lovers looking for an easy, crowd-pleasing frozen treat.

Ingredients

Scale

Crust

  • 1 ½ cups chocolate cookie crumbs (like Oreos, crushed with filling)
  • ¼ cup unsalted butter, melted

Ice Cream Layer

  • 1.5 quarts vanilla ice cream (slightly softened)
  • 4 Galaxy Ripple chocolate bars, chopped

Sauces and Toppings

  • ½ cup caramel sauce
  • ½ cup chocolate sauce
  • Whipped cream for topping (optional)
  • Extra chocolate curls or sprinkles for garnish

Instructions

  1. Prepare the crust: Line the bottom of a 9-inch springform pan with parchment paper. In a medium bowl, combine the chocolate cookie crumbs and melted butter until well mixed. Press this mixture firmly into the bottom of the prepared pan to form an even crust. Place in the freezer for 15 minutes to set.
  2. Mix ice cream and chocolate: In a large bowl, gently fold together the softened vanilla ice cream and the chopped Galaxy Ripple bars ensuring the chocolate is evenly distributed throughout the ice cream.
  3. Assemble first ice cream layer: Spread half of the ice cream and chocolate mixture evenly over the chilled cookie crust. Drizzle half of the caramel and chocolate sauces generously over this layer.
  4. Layer and top: Repeat by spreading the remaining ice cream mixture over the sauces, then drizzle the remaining caramel and chocolate sauces on top. Smooth the surface with a spatula for an even finish.
  5. Freeze the cake: Transfer the assembled cake to the freezer and freeze for at least 4 hours, or until the cake is completely firm.
  6. Serve: Before serving, remove the cake from the freezer and let it sit at room temperature for 5–10 minutes to soften slightly for easier slicing. Add whipped cream, chocolate curls, or extra chopped Galaxy Ripple pieces on top if desired. Slice and serve chilled.

Notes

  • You can substitute the Galaxy Ripple bars with any layered chocolate bars of your choice to vary the flavor.
  • For an even richer taste, try using chocolate or caramel flavored ice cream instead of vanilla as the base.
  • Ensure the ice cream is slightly softened before mixing for easier folding of the chocolate pieces.
  • Use a warm knife to slice the cake cleanly for better presentation.
  • Store leftovers covered in the freezer to maintain freshness and texture.
