- 1 (15 oz) can black beans, drained and rinsed
- 1 1/2 cups fresh or frozen corn, thawed
- 1 red bell pepper, diced
- 1/2 red onion, finely chopped
- 1 jalapeño, seeded and minced
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons olive oil
- 2 tablespoons fresh lime juice
- 1 teaspoon ground cumin
- Salt and pepper to taste
Instructions
- In a large bowl, combine the black beans, corn, red bell pepper, red onion, jalapeño, and cilantro.
- In a small bowl, whisk together the olive oil, lime juice, cumin, salt, and pepper.
- Pour the dressing over the salad and toss to combine.
- Let the salad sit for at least 15 minutes to allow the flavors to meld.
- Serve chilled or at room temperature.
Notes
- You can substitute fresh corn with canned if needed—just drain well.
- Add diced avocado for extra creaminess right before serving.
- Great as a dip with tortilla chips or as a topping for tacos.
