  • 4 slices sourdough or crusty bread
  • 1 medium yellow onion, thinly sliced
  • 1 tablespoon butter

  • Pinch of salt
  • 1 small crisp apple (like Honeycrisp), thinly sliced
  • 4 slices Gruyère cheese
  • 2 tablespoons mayonnaise or softened butter (for bread)


Instructions

  1. Caramelize the Onions: Heat butter and olive oil in a skillet over medium heat. Add the thinly sliced onions, pinch of salt, and sugar. Cook slowly, stirring often, for 15–20 minutes until the onions turn deeply golden and caramelized. Remove from heat.
  2. Prepare the Bread: Spread mayonnaise or softened butter on one side of each slice of bread. Place two slices spread side down on a clean surface.
  3. Assemble the Sandwiches: On each of the bread slices, layer one slice of Gruyère cheese, followed by a few thin slices of apple, a spoonful of the caramelized onions, and another slice of cheese. Top each with the remaining slices of bread, spread side up.
  4. Grill the Sandwiches: Heat a clean skillet over medium heat. Grill the sandwiches for 3–4 minutes on each side, until the bread is golden brown and the cheese has melted.
  5. Rest and Serve: Remove the sandwiches from the skillet and let them rest for 1 minute before slicing and serving warm, to allow the flavors to meld.
