Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1 9-inch pie crust (store-bought or homemade)
  • 4 large eggs
  • 1 cup whole milk or half-and-half
  • 1 cup shredded cheddar cheese
  • 1/2 cup green onions, chopped
  • 1/2 cup red bell pepper, diced
  • 2 cloves garlic, minced
  • 2 tbsp unsalted butter
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp paprika
  • 2 tbsp fresh parsley, chopped (for garnish)


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Blind bake the pie crust according to package directions or your recipe until lightly golden; set aside.
  3. In a skillet, melt butter over medium heat. Sauté garlic, red bell pepper, and green onions for 3-4 minutes until softened. Add shrimp and cook until pink and opaque; remove from heat.
  4. In a bowl, whisk together eggs, milk, salt, black pepper, and paprika.
  5. Spread the shrimp and vegetables evenly into the baked pie crust. Sprinkle shredded cheddar cheese over the top.
  6. Pour the egg mixture over the filling to cover evenly.
  7. Bake for 35-40 minutes or until the filling is set and lightly golden on top.
  8. Let the pie rest for 5-10 minutes before slicing. Garnish with fresh parsley if desired.
