Ingredients
- 1 lb shrimp, peeled and deveined
- 1 9-inch pie crust (store-bought or homemade)
- 4 large eggs
- 1 cup whole milk or half-and-half
- 1 cup shredded cheddar cheese
- 1/2 cup green onions, chopped
- 1/2 cup red bell pepper, diced
- 2 cloves garlic, minced
- 2 tbsp unsalted butter
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp paprika
- 2 tbsp fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 375°F (190°C).
- Blind bake the pie crust according to package directions or your recipe until lightly golden; set aside.
- In a skillet, melt butter over medium heat. Sauté garlic, red bell pepper, and green onions for 3-4 minutes until softened. Add shrimp and cook until pink and opaque; remove from heat.
- In a bowl, whisk together eggs, milk, salt, black pepper, and paprika.
- Spread the shrimp and vegetables evenly into the baked pie crust. Sprinkle shredded cheddar cheese over the top.
- Pour the egg mixture over the filling to cover evenly.
- Bake for 35-40 minutes or until the filling is set and lightly golden on top.
- Let the pie rest for 5-10 minutes before slicing. Garnish with fresh parsley if desired.
