  • Nonstick cooking spray


Instructions

  1. Prepare molds: Lightly spray a silicone lollipop mold or a parchment-lined baking sheet with nonstick spray. Insert lollipop sticks into the mold or arrange on the parchment paper.
  2. Make sugar syrup: In a medium saucepan over medium heat, combine the granulated sugar, light corn syrup, and water. Stir gently until the sugar dissolves completely. Once dissolved, stop stirring and allow the mixture to come to a boil.
  3. Cook to hard crack stage: Boil the syrup without stirring until it reaches 300°F (hard crack stage) on a candy thermometer. This ensures the lollipops will harden properly.
  4. Add flavor and acid: Remove the pan from heat and carefully stir in the unsweetened Kool-Aid powder and food-grade citric acid until fully dissolved, infusing the syrup with tangy flavor.
  5. Cool slightly and mix fizz: Allow the mixture to cool for about 1 minute so it is less hot but still pourable. Then, gently fold in the popping candy to retain its fizzy effect.
  6. Shape the lollipops: Quickly spoon the mixture into the prepared molds or create small circles on the parchment paper, making sure to cover the lollipop sticks well.
  7. Let harden: Allow the lollipops to cool and harden completely at room temperature before carefully removing them from the molds or parchment.
