Description

Ingredients

  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 large onion, sliced
  • 2 tablespoons olive oil

  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper, to taste
  • 8 small flour tortillas
  • 1 avocado, sliced
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add the sliced bell peppers and onions to the skillet.
  3. Sprinkle with chili powder, cumin, smoked paprika, garlic powder, salt, and pepper.
  4. Sauté for 7-10 minutes, stirring occasionally, until vegetables are tender and slightly charred.
  5. Warm tortillas in a dry skillet or microwave.
  6. Fill each tortilla with the sautéed veggies.
  7. Top with avocado slices and fresh cilantro.
  8. Serve immediately with lime wedges on the side.
