Instructions
- Let the vanilla ice cream sit at room temperature for a few minutes until slightly softened.
- Place a scoop of ice cream on the flat side of one cookie.
- Top with another cookie, flat side down, to create a sandwich.
- Gently press the cookies together to spread the ice cream evenly.
- Roll the sides of the sandwich in red, white, and blue sprinkles until coated.
- Place on a tray and repeat with remaining cookies and ice cream.
- Freeze the sandwiches for at least 1 hour or until firm before serving.
