These festive Red, White and Blue Ice Cream Sandwiches are a fun and easy patriotic dessert perfect for summer gatherings and holidays like the Fourth of July or Memorial Day.

Ingredients

Units Scale
  • 1 box of red, white, and blue sprinkles
  • 1 pint vanilla ice cream
  • 12 chocolate chip cookies (store-bought or homemade)

Instructions

  1. Let the vanilla ice cream sit at room temperature for a few minutes until slightly softened.
  2. Place a scoop of ice cream on the flat side of one cookie.
  3. Top with another cookie, flat side down, to create a sandwich.
  4. Gently press the cookies together to spread the ice cream evenly.
  5. Roll the sides of the sandwich in red, white, and blue sprinkles until coated.
  6. Place on a tray and repeat with remaining cookies and ice cream.
  7. Freeze the sandwiches for at least 1 hour or until firm before serving.

Notes

  • You can substitute chocolate chip cookies with sugar cookies or your favorite variety.
  • Use gloves when assembling to avoid melting the ice cream quickly.
