- 1 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 2 cups all-purpose flour, divided
- 1/4 teaspoon salt
- 4 large eggs
- 1 1/2 cups granulated sugar
- 1/4 cup all-purpose flour
- 2/3 cup freshly squeezed lemon juice
- Powdered sugar, for dusting
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- In a bowl, cream together the softened butter and 1/2 cup sugar.
- Mix in 2 cups flour and salt until a crumbly dough forms.
- Press the dough evenly into the prepared baking dish and bake for 15–20 minutes, or until lightly golden.
- In another bowl, whisk together the eggs, 1 1/2 cups sugar, 1/4 cup flour, and lemon juice until smooth.
- Pour the lemon mixture over the hot crust and return to oven.
- Bake for an additional 20–25 minutes or until the filling is set.
- Let cool completely, then dust with powdered sugar before cutting into bars.
Notes
- For best results, use freshly squeezed lemon juice.
- Store in the refrigerator for up to 5 days.
- Dust with powdered sugar just before serving to keep them looking fresh.
