Description

A quick and easy homemade mayonnaise recipe made with avocado oil, perfect for a creamy and healthy spread or dressing.

Ingredients

Units Scale
  • 1 large egg (room temperature)
  • 1 tablespoon lemon juice (or white vinegar)
  • 1/2 teaspoon Dijon mustard
  • 1/4 teaspoon salt
  • 1 cup avocado oil

Instructions

  1. Add the egg, lemon juice, mustard, and salt to a tall container or jar.
  2. Pour the avocado oil on top, allowing it to settle.
  3. Place an immersion blender at the bottom of the container and blend without moving until the mixture starts to emulsify.
  4. Slowly raise the blender as the mayonnaise thickens until all oil is incorporated.
  5. Taste and adjust seasoning if needed.
  6. Store in an airtight container in the refrigerator for up to one week.

Notes

  • Ensure all ingredients are at room temperature to prevent the mayonnaise from breaking.
  • You can substitute lemon juice with white vinegar for a tangier taste.
  • Store in a clean, airtight container to maximize freshness.
