- 1 (20 oz) can pineapple chunks in juice, drained (reserve 1/4 cup juice)
- 1 (20 oz) can crushed pineapple, drained
- 1 cup granulated sugar
- 6 tablespoons all-purpose flour
- 2 cups shredded sharp cheddar cheese
- 1 cup Ritz cracker crumbs (about 1 sleeve)
- 1/2 cup unsalted butter, melted
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix together the sugar and flour.
- Add in the drained pineapple chunks, crushed pineapple, and reserved juice. Stir to combine.
- Fold in the shredded cheddar cheese until well mixed.
- Transfer the mixture to a greased 9×13-inch baking dish.
- In a separate bowl, mix the cracker crumbs with the melted butter until evenly coated.
- Sprinkle the buttery cracker mixture evenly over the pineapple-cheese mixture.
- Bake for 25–30 minutes, or until bubbly and golden on top.
- Let cool for a few minutes before serving warm.
