Description

These Easy Applesauce Muffins are moist, fluffy, and lightly spiced, making them a perfect snack or breakfast treat.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp salt
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 cup unsweetened applesauce
  • 1/3 cup vegetable oil
  • 1/4 cup milk
  • 1 large egg
  • 1 tsp vanilla extract


Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease it.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In a large bowl, whisk together the granulated sugar, brown sugar, applesauce, vegetable oil, milk, egg, and vanilla extract until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, stirring just until combined. Do not overmix.
  5. Divide the batter evenly among the muffin cups, filling each about 2/3 full.
  6. Bake for 18–22 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.

Notes

  • You can add 1/2 cup of chopped nuts or raisins for added texture and flavor.
  • These muffins can be stored in an airtight container at room temperature for up to 3 days.
  • For a healthier version, substitute whole wheat flour for half of the all-purpose flour.
