  • 1/2 cup crumbled feta cheese
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh parsley or dill, for garnish (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a 9×13-inch baking dish, combine the uncooked rice and chicken broth. Stir to evenly distribute.
  3. Scatter the chicken pieces over the rice mixture and season with oregano, garlic powder, salt, and pepper.
  4. Drizzle with olive oil and spread the tzatziki sauce evenly over the top.
  5. Add cherry tomatoes and sprinkle with crumbled feta cheese.
  6. Cover the dish tightly with foil and bake for 45 minutes.
  7. Remove foil and bake for an additional 10-15 minutes, or until the rice is tender and the chicken is cooked through.
  8. Let stand for 5 minutes before serving. Garnish with fresh parsley or dill if desired.

  • You can substitute brown rice, but increase the baking time by 15-20 minutes and check for doneness.
