Ingredients
- 1 cup long grain white rice (uncooked)
- 1 ½ cups chicken broth
- 1 pound boneless, skinless chicken breast, cut into bite-sized pieces
- 1 cup tzatziki sauce (store-bought or homemade)
- 1 cup cherry tomatoes, halved
- ½ cup crumbled feta cheese
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- ½ teaspoon garlic powder
- Salt and pepper to taste
- Fresh parsley or dill, for garnish (optional)
Instructions
- Preheat oven to 375°F (190°C).
- In a 9×13-inch baking dish, combine the uncooked rice and chicken broth. Stir to evenly distribute.
- Scatter the chicken pieces over the rice mixture and season with oregano, garlic powder, salt, and pepper.
- Drizzle with olive oil and spread the tzatziki sauce evenly over the top.
- Add cherry tomatoes and sprinkle with crumbled feta cheese.
- Cover the dish tightly with foil and bake for 45 minutes.
- Remove foil and bake for an additional 10-15 minutes, or until the rice is tender and the chicken is cooked through.
- Let stand for 5 minutes before serving. Garnish with fresh parsley or dill if desired.

- You can substitute brown rice, but increase the baking time by 15-20 minutes and check for doneness.
- For a dairy-free version, use a dairy-free tzatziki and omit the feta cheese.
