Description

Fudgy, rich brownies made with nutritious einkorn flour and double the chocolate—perfectly decadent yet wholesome.


Ingredients

  • 1 cup unsalted butter, melted
  • 1½ cups granulated sugar
  • ¾ cup packed brown sugar
  • 3 large eggs, room temperature
  • 2 tsp vanilla extract
  • 1 cup einkorn flour
  • ½ cup unsweetened cocoa powder
  • ½ tsp salt
  • ½ tsp baking powder
  • 1 cup semi-sweet chocolate chips
  • ¾ cup chopped dark chocolate or extra chips


Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×9-inch pan with parchment, leaving an overhang.
  2. In a large bowl, whisk melted butter, granulated sugar, and brown sugar until combined.
  3. Add eggs one at a time, whisking well, then stir in vanilla.
  4. In another bowl, whisk together einkorn flour, cocoa powder, salt, and baking powder.
  5. Gradually stir dry ingredients into the wet ingredients until just combined.
  6. Fold in chocolate chips and chopped chocolate.
  7. Spread batter evenly in the prepared pan.
  8. Bake for 25–30 minutes, or until a toothpick comes out with moist crumbs (not wet batter).
  9. Cool completely in pan on a wire rack, about 1 hour, then lift brownies using parchment and cut into squares.
  10. Store in an airtight container at room temperature for up to 3 days or freeze for up to 2 months.

Notes

  • Use high-quality dark chocolate for richer flavor.
  • Do not overmix to maintain a fudgy texture.
  • For extra richness, add a handful of white chocolate chips.
  • Cool completely before cutting for clean edges.
  • Swap half the granulated sugar for coconut sugar for a more caramel-like taste.
