Description

Tacos Al Pastor are a classic Mexican street food featuring marinated pork, grilled pineapple, and fresh toppings served in warm corn tortillas.

Ingredients

Units Scale
  • 2 lbs pork shoulder, thinly sliced
  • 3 dried guajillo chiles, stemmed and seeded
  • 3 dried ancho chiles, stemmed and seeded
  • 1/2 cup pineapple juice
  • 1/4 cup white vinegar
  • 3 cloves garlic
  • 1 tsp dried oregano
  • 1 tsp ground cumin
  • 1/4 tsp ground cloves
  • 1/2 tsp ground cinnamon
  • 1 chipotle pepper in adobo sauce
  • 1 tbsp achiote paste
  • 1 tbsp salt
  • 1 tbsp vegetable oil
  • 1 cup diced pineapple
  • Small corn tortillas, for serving
  • Chopped onion, for garnish
  • Chopped cilantro, for garnish
  • Lime wedges, for serving

Instructions

  1. Soak the guajillo and ancho chiles in hot water for 15 minutes until softened.
  2. In a blender, combine the soaked chiles, pineapple juice, vinegar, garlic, oregano, cumin, cloves, cinnamon, chipotle, achiote paste, and salt. Blend until smooth.
  3. Marinate the pork slices in the blended sauce for at least 4 hours or overnight in the refrigerator.
  4. Heat oil in a large skillet or grill pan over medium-high heat. Cook the marinated pork until slightly charred and cooked through, about 5-7 minutes per side.
  5. In the same skillet, cook the diced pineapple until caramelized, about 3-4 minutes.
  6. Warm the corn tortillas in a dry skillet or on a grill.
  7. Assemble the tacos by placing the cooked pork and pineapple on tortillas. Top with chopped onion and cilantro.
  8. Serve with lime wedges on the side.

Notes

  • Marinating overnight will enhance the flavor significantly.
  • You can use pork loin for a leaner version.
  • Serve with salsa verde or your favorite hot sauce for extra kick.
