Description
Tacos Al Pastor are a classic Mexican street food featuring marinated pork, grilled pineapple, and fresh toppings served in warm corn tortillas.

- 2 lbs pork shoulder, thinly sliced
- 3 dried guajillo chiles, stemmed and seeded
- 3 dried ancho chiles, stemmed and seeded
- 1/2 cup pineapple juice
- 1/4 cup white vinegar
- 3 cloves garlic
- 1 tsp dried oregano
- 1 tsp ground cumin
- 1/4 tsp ground cloves
- 1/2 tsp ground cinnamon
- 1 chipotle pepper in adobo sauce
- 1 tbsp achiote paste
- 1 tbsp salt
- 1 tbsp vegetable oil
- 1 cup diced pineapple
- Small corn tortillas, for serving
- Chopped onion, for garnish
- Chopped cilantro, for garnish
- Lime wedges, for serving
Instructions
- Soak the guajillo and ancho chiles in hot water for 15 minutes until softened.
- In a blender, combine the soaked chiles, pineapple juice, vinegar, garlic, oregano, cumin, cloves, cinnamon, chipotle, achiote paste, and salt. Blend until smooth.
- Marinate the pork slices in the blended sauce for at least 4 hours or overnight in the refrigerator.
- Heat oil in a large skillet or grill pan over medium-high heat. Cook the marinated pork until slightly charred and cooked through, about 5-7 minutes per side.
- In the same skillet, cook the diced pineapple until caramelized, about 3-4 minutes.
- Warm the corn tortillas in a dry skillet or on a grill.
- Assemble the tacos by placing the cooked pork and pineapple on tortillas. Top with chopped onion and cilantro.
- Serve with lime wedges on the side.
Notes
- Marinating overnight will enhance the flavor significantly.
- You can use pork loin for a leaner version.
- Serve with salsa verde or your favorite hot sauce for extra kick.
