  • 2 large eggs
  • 1/2 cup sour cream
  • 1/4 cup milk
  • 1/4 cup fresh lemon juice

  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 package (8 oz) cream cheese, softened
  • 1/4 cup granulated sugar (for cream cheese layer)
  • 1 large egg (for cream cheese layer)
  • 1/2 teaspoon vanilla extract (for cream cheese layer)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
  2. In a large bowl, cream together the butter and 1 cup sugar until light and fluffy.
  3. Beat in the eggs, one at a time, then add sour cream, milk, lemon juice, and lemon zest. Mix until combined.
  4. In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing just until combined.
  6. In another bowl, beat the cream cheese with 1/4 cup sugar, 1 egg, and vanilla extract until smooth.
  7. Pour half of the lemon batter into the prepared loaf pan. Spoon the cream cheese mixture on top and spread evenly. Top with the remaining lemon batter.
  8. Swirl lightly with a knife for a marbled effect if desired.
  9. Bake for 55–65 minutes or until a toothpick inserted in the center comes out clean.
  10. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
