Description

A fresh and vibrant Cucumber Sweet Pepper Salad combining crisp cucumbers, colorful sweet bell peppers, and sharp red onion, dressed with zesty lemon juice and extra virgin olive oil. This quick and easy salad is perfect as a light side dish or a healthy snack, ready in just 15 minutes.

Ingredients

Scale

Vegetables

  • 2 cups cucumbers, sliced
  • 1 cup sweet bell peppers, chopped (red, yellow, or orange)
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped

Dressing

  • 2 tbsp lemon juice (freshly squeezed)
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Wash Vegetables: Wash all vegetables thoroughly under cool running water to remove any dirt or residues.
  2. Prepare Cucumbers and Peppers: Slice cucumbers into thin rounds or half-moons and chop sweet bell peppers into bite-sized pieces for easy eating.
  3. Prepare Onion: Thinly slice the red onion. Optionally soak the slices in cold water for 10 minutes to mellow the sharpness of the onion.
  4. Combine Ingredients: In a large mixing bowl, combine the cucumbers, chopped bell peppers, red onion, and chopped fresh parsley.
  5. Add Dressing: Drizzle the olive oil and freshly squeezed lemon juice over the vegetables. Season with salt and pepper according to taste.
  6. Toss and Rest: Gently toss the salad until all ingredients are well coated with the dressing. Let the salad sit for about 10 minutes before serving, allowing the flavors to meld.

Notes

  • Soaking red onion in cold water reduces its sharpness for a milder taste.
  • You can substitute lemon juice with lime juice for a different citrus flavor.
  • Serve chilled or at room temperature depending on preference.
  • Great as a refreshing side dish for grilled meats or sandwiches.
