Description

A refreshing and crunchy salad made with cucumbers, peanuts, and a tangy dressing, perfect for a light snack or side dish.


Ingredients

  • 2 large cucumbers, thinly sliced
  • 1/2 cup roasted peanuts, coarsely chopped
  • 1 tablespoon olive oil
  • 1 tablespoon rice vinegar
  • 1 teaspoon honey
  • 1/2 teaspoon soy sauce
  • 1/4 teaspoon sesame oil
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • Fresh cilantro leaves for garnish

Instructions

  1. In a large bowl, combine the sliced cucumbers and chopped peanuts.
  2. In a small bowl, whisk together the olive oil, rice vinegar, honey, soy sauce, sesame oil, and red pepper flakes (if using) until well combined.
  3. Pour the dressing over the cucumber and peanut mixture and toss to coat evenly.
  4. Garnish with fresh cilantro leaves before serving.
  5. Chill in the refrigerator for about 10-15 minutes before serving for enhanced flavor.

Notes

  • For an extra crunch, add some sliced red onions or bell peppers.
  • If you prefer a spicier version, increase the amount of red pepper flakes or add a dash of sriracha to the dressing.
