- 4 cod fillets (about 6 oz each)
- 1 cup panko breadcrumbs
- 1/4 cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley
- 1 teaspoon garlic powder
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 1/4 cup all-purpose flour
- 1 large egg
- 1 tablespoon Dijon mustard
- 2 tablespoons olive oil (for drizzling or spraying)
Instructions
- Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
- In a shallow bowl, mix panko breadcrumbs, Parmesan, parsley, garlic powder, paprika, salt, and pepper.
- Place flour in another shallow bowl. In a third bowl, whisk the egg with Dijon mustard.
- Pat cod fillets dry with paper towels. Dredge each fillet in flour, then dip in the egg mixture, and finally coat with the panko mixture, pressing gently to adhere.
- Place the coated fillets on the prepared baking sheet. Lightly drizzle or spray the tops with olive oil.
- Bake for 15-20 minutes, or until the fish is cooked through and the crust is golden and crispy.
- Serve immediately with lemon wedges or your favorite dipping sauce.
Notes
- Use fresh cod for best flavor, but frozen (thawed) works well too.
- Panko breadcrumbs give the best crunch; regular breadcrumbs can be used but will be less crispy.
- Add a pinch of cayenne for a spicy kick.
