Mushroom Mixture
- 2 tablespoons butter (divided)
- 2 tablespoons olive oil (divided)
- 4 cloves garlic (minced, divided)
- 1 pound cremini mushrooms (sliced)
Rice and Broth
- 1 small yellow onion (diced)
- 1½ cups long-grain rice
- 2½ cups low-sodium broth (chicken or vegetable)
- Fresh thyme (to taste)
- Salt (to taste)
- Black pepper (to taste)
- Chopped green onions (for garnish)
Instructions
- Sauté Mushrooms: In a large pan, melt 1 tablespoon of butter with 1 tablespoon of olive oil over medium-high heat. Add half of the minced garlic and sauté until fragrant. Add the sliced cremini mushrooms and cook, stirring occasionally, for about 8 minutes until caramelized and tender. Remove the mushrooms from the pan and set aside.
- Cook Onions and Garlic: In the same pan, heat the remaining butter and olive oil over medium heat. Add the diced yellow onion and cook until softened and translucent. Stir in the remaining minced garlic and cook briefly until fragrant, about 30 seconds.
- Toast Rice: Add the uncooked long-grain rice, fresh thyme, salt, and black pepper into the pan. Toast the rice mixture for about 30 seconds while stirring to coat the grains evenly and release a nutty aroma.
- Deglaze Pan: Pour in half a cup of the broth to deglaze the pan, scraping up browned bits from the bottom with a wooden spoon to enhance the flavor.
- Simmer Rice: Add the remaining broth, increase the heat slightly to bring to a simmer, then reduce to low heat and cover the pan. Let the rice cook gently for 15 to 17 minutes until all the liquid is absorbed and the rice is tender.
- Combine and Rest: Remove the pan from heat and gently fold in the sautéed mushrooms and chopped green onions. Cover the pan again and let the dish rest for 10 minutes to allow flavors to meld and the texture to set.
- Serve: Fluff the mushroom rice with a fork and serve warm as a flavorful side dish or meatless main course.
