Description

A rich and comforting pasta dish featuring fettuccine tossed in a creamy sauce with flavorful Italian sausage and a touch of garlic and herbs.


Ingredients

  • 12 oz fettuccine pasta
  • 1 lb Italian sausage (mild or spicy, casing removed)
  • 1 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 small onion, diced
  • 1/2 tsp red pepper flakes (optional)
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 2 tbsp chopped fresh parsley (for garnish)


Instructions

  1. Cook the fettuccine pasta in a large pot of salted boiling water according to package directions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add Italian sausage and cook until browned, breaking it up with a spoon.
  3. Add the diced onion and cook for 3-4 minutes until softened. Stir in the garlic and red pepper flakes, cooking for another minute.
  4. Pour in the chicken broth and bring to a simmer, scraping up any browned bits from the pan.
  5. Reduce heat to low, add heavy cream, and stir to combine. Simmer for 5-7 minutes until slightly thickened.
  6. Stir in the grated Parmesan cheese and season with salt and pepper to taste.
  7. Add the cooked fettuccine to the skillet and toss to coat in the sauce.
  8. Garnish with chopped parsley and serve hot.

Notes

  • Use spicy Italian sausage for a kick of heat.
  • For extra richness, add a tablespoon of butter to the sauce.
  • Substitute half-and-half for a lighter version of the sauce.
