A rich and comforting pasta dish featuring fettuccine tossed in a creamy sauce with flavorful Italian sausage and a touch of garlic and herbs.
Ingredients
- 12 oz fettuccine pasta
- 1 lb Italian sausage (mild or spicy, casing removed)
- 1 tbsp olive oil
- 3 cloves garlic, minced
- 1 small onion, diced
- 1/2 tsp red pepper flakes (optional)
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- 2 tbsp chopped fresh parsley (for garnish)
Instructions
- Cook the fettuccine pasta in a large pot of salted boiling water according to package directions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add Italian sausage and cook until browned, breaking it up with a spoon.
- Add the diced onion and cook for 3-4 minutes until softened. Stir in the garlic and red pepper flakes, cooking for another minute.
- Pour in the chicken broth and bring to a simmer, scraping up any browned bits from the pan.
- Reduce heat to low, add heavy cream, and stir to combine. Simmer for 5-7 minutes until slightly thickened.
- Stir in the grated Parmesan cheese and season with salt and pepper to taste.
- Add the cooked fettuccine to the skillet and toss to coat in the sauce.
- Garnish with chopped parsley and serve hot.
Notes
- Use spicy Italian sausage for a kick of heat.
- For extra richness, add a tablespoon of butter to the sauce.
- Substitute half-and-half for a lighter version of the sauce.
