Description

Creamy Chicken Pesto Lasagna Roll Ups are a delicious twist on traditional lasagna, filled with shredded chicken, creamy ricotta, pesto, and mozzarella, then rolled up and baked to perfection.


Ingredients

  • 8 lasagna noodles
  • 2 cups cooked shredded chicken
  • 1 cup ricotta cheese
  • 1/2 cup prepared basil pesto
  • 1 egg
  • 1 1/2 cups shredded mozzarella cheese, divided
  • 1/2 cup grated Parmesan cheese
  • 2 cups Alfredo sauce
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish.
  2. Cook lasagna noodles according to package instructions. Drain and lay flat on parchment paper.
  3. In a bowl, mix shredded chicken, ricotta cheese, pesto, egg, 1 cup mozzarella, Parmesan, salt, and pepper.
  4. Spread 2 tablespoons of filling over each noodle and roll up tightly.
  5. Spread 1 cup of Alfredo sauce on the bottom of the baking dish.
  6. Place roll ups seam-side down in the dish and top with remaining Alfredo sauce and 1/2 cup mozzarella cheese.
  7. Cover with foil and bake for 20 minutes. Remove foil and bake another 10 minutes until bubbly and golden.
  8. Let cool slightly, garnish with fresh basil, and serve.

Notes

  • You can use rotisserie chicken to save time.
  • Substitute cottage cheese for ricotta if preferred.
  • Use homemade or store-bought Alfredo sauce.
  • Add a pinch of red pepper flakes for heat.
