Description

Cozy Lemon Chicken & Rice Soup is a comforting, bright, and hearty soup made with tender chicken, fluffy rice, and fresh lemon for a pop of flavor. It’s the perfect one-pot meal to warm you up on a chilly day.


Ingredients

  • 1 lb boneless, skinless chicken breasts or thighs
  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 8 cups chicken broth
  • 1 cup long-grain white rice
  • 1 tsp dried thyme
  • 1 bay leaf
  • 2 lemons (zest and juice)
  • 1/4 cup fresh parsley, chopped
  • Salt and black pepper, to taste


Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery. Sauté for 5-6 minutes until vegetables soften.
  2. Add garlic and cook for another 30 seconds until fragrant.
  3. Pour in chicken broth, thyme, and bay leaf. Add chicken breasts and bring to a simmer.
  4. Cover and cook for 20 minutes or until chicken is cooked through. Remove chicken, shred with forks, and return to pot.
  5. Add rice and simmer for 15-20 minutes until rice is tender.
  6. Stir in lemon zest, lemon juice, and chopped parsley. Season with salt and pepper to taste.
  7. Serve hot with extra lemon wedges if desired.

Notes

  • Add more broth if the soup thickens too much as the rice absorbs liquid.
  • For extra creaminess, stir in a splash of heavy cream before serving.
  • This soup keeps well in the fridge for up to 4 days.
