Ingredients
- 1 lb boneless, skinless chicken breasts or thighs
- 1 tbsp olive oil
- 1 medium onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 8 cups chicken broth
- 1 cup long-grain white rice
- 1 tsp dried thyme
- 1 bay leaf
- 2 lemons (zest and juice)
- 1/4 cup fresh parsley, chopped
- Salt and black pepper, to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery. Sauté for 5-6 minutes until vegetables soften.
- Add garlic and cook for another 30 seconds until fragrant.
- Pour in chicken broth, thyme, and bay leaf. Add chicken breasts and bring to a simmer.
- Cover and cook for 20 minutes or until chicken is cooked through. Remove chicken, shred with forks, and return to pot.
- Add rice and simmer for 15-20 minutes until rice is tender.
- Stir in lemon zest, lemon juice, and chopped parsley. Season with salt and pepper to taste.
- Serve hot with extra lemon wedges if desired.
Notes
- Add more broth if the soup thickens too much as the rice absorbs liquid.
- For extra creaminess, stir in a splash of heavy cream before serving.
- This soup keeps well in the fridge for up to 4 days.
