Description

Rich and fudgy brownies made healthier with the addition of creamy cottage cheese, offering a protein-packed twist to a classic dessert.


Ingredients

  • 1/2 cup cottage cheese
  • 1/2 cup unsalted butter, melted
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 tsp salt
  • 1/4 tsp baking powder
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease or line an 8×8 inch baking dish with parchment paper.
  2. In a blender or food processor, blend the cottage cheese until smooth.
  3. In a large mixing bowl, combine the melted butter, granulated sugar, and brown sugar. Mix until well combined.
  4. Add the eggs and vanilla extract, then mix again.
  5. Stir in the blended cottage cheese until fully incorporated.
  6. Sift in the cocoa powder, flour, salt, and baking powder. Stir until just combined.
  7. Fold in the chocolate chips if using.
  8. Pour the batter into the prepared baking dish and spread evenly.
  9. Bake for 25–30 minutes, or until a toothpick inserted in the center comes out with moist crumbs.
  10. Allow to cool before slicing into squares and serving.

Notes

  • You can substitute Greek yogurt for cottage cheese for a tangier flavor.
  • For a richer brownie, add more chocolate chips or swirl in some nut butter before baking.
  • Store leftovers in an airtight container for up to 3 days.
