- 1/2 cup cottage cheese
- 1/2 cup unsalted butter, melted
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/3 cup unsweetened cocoa powder
- 1/2 cup all-purpose flour
- 1/4 tsp salt
- 1/4 tsp baking powder
- 1/2 cup chocolate chips (optional)
Instructions
- Preheat the oven to 350°F (175°C) and grease or line an 8×8 inch baking dish with parchment paper.
- In a blender or food processor, blend the cottage cheese until smooth.
- In a large mixing bowl, combine the melted butter, granulated sugar, and brown sugar. Mix until well combined.
- Add the eggs and vanilla extract, then mix again.
- Stir in the blended cottage cheese until fully incorporated.
- Sift in the cocoa powder, flour, salt, and baking powder. Stir until just combined.
- Fold in the chocolate chips if using.
- Pour the batter into the prepared baking dish and spread evenly.
- Bake for 25–30 minutes, or until a toothpick inserted in the center comes out with moist crumbs.
- Allow to cool before slicing into squares and serving.
Notes
- You can substitute Greek yogurt for cottage cheese for a tangier flavor.
- For a richer brownie, add more chocolate chips or swirl in some nut butter before baking.
- Store leftovers in an airtight container for up to 3 days.
