Description
A fresh and zesty corn salsa made with sweet corn, tomatoes, onions, and lime juice. Perfect as a dip or topping for tacos and grilled dishes.
Ingredients
- 2 cups corn kernels (fresh, canned, or frozen)
- 1 cup cherry tomatoes, diced
- 1/2 red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1 jalapeño, seeded and minced
- 2 tablespoons lime juice (about 1 lime)
- 1 tablespoon olive oil
- Salt to taste
- Black pepper to taste
Instructions
- If using frozen corn, thaw it; if using fresh corn, cook and cut kernels off the cob.
- In a large mixing bowl, combine corn, tomatoes, red onion, cilantro, and jalapeño.
- Drizzle with lime juice and olive oil.
- Season with salt and black pepper to taste.
- Mix well until all ingredients are evenly coated.
- Chill in the refrigerator for 15–30 minutes to allow flavors to meld.
- Serve cold as a dip or topping.
Notes
- Roast the corn for a smoky flavor.
- Add avocado for a creamy texture.
- Adjust the heat level by using more or less jalapeño.
