Description

A fresh and zesty corn salsa made with sweet corn, tomatoes, onions, and lime juice. Perfect as a dip or topping for tacos and grilled dishes.


Ingredients

  • 2 cups corn kernels (fresh, canned, or frozen)
  • 1 cup cherry tomatoes, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 jalapeño, seeded and minced
  • 2 tablespoons lime juice (about 1 lime)
  • 1 tablespoon olive oil
  • Salt to taste
  • Black pepper to taste


Instructions

  1. If using frozen corn, thaw it; if using fresh corn, cook and cut kernels off the cob.
  2. In a large mixing bowl, combine corn, tomatoes, red onion, cilantro, and jalapeño.
  3. Drizzle with lime juice and olive oil.
  4. Season with salt and black pepper to taste.
  5. Mix well until all ingredients are evenly coated.
  6. Chill in the refrigerator for 15–30 minutes to allow flavors to meld.
  7. Serve cold as a dip or topping.

Notes

  • Roast the corn for a smoky flavor.
  • Add avocado for a creamy texture.
  • Adjust the heat level by using more or less jalapeño.
