Ingredients
Scale
Dry Ingredients
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ teaspoon paprika (optional)
Wet Ingredients
- 2 large eggs
- â…“ cup milk
Main Ingredients
- 2 cups corn kernels (fresh, canned, or thawed from frozen)
- ¼ cup chopped green onions
- ½ cup shredded cheddar cheese (optional)
For Frying
- Vegetable oil (about ¼ inch in the skillet)
Instructions
- Prepare the batter: In a large bowl, whisk together the flour, baking powder, salt, black pepper, and paprika. In a separate bowl, beat the eggs and milk together until combined, then pour this wet mixture into the dry ingredients. Stir gently until just combined to avoid overmixing.
- Fold in the mix-ins: Carefully fold in the corn kernels, chopped green onions, and shredded cheddar cheese if using, ensuring an even distribution throughout the batter. The batter should be thick but still scoopable.
- Heat the oil: Pour about ¼ inch of vegetable oil into a skillet and heat it over medium heat until hot but not smoking.
- Fry the fritters: Drop heaping tablespoons of batter into the hot oil, flattening each slightly with the back of a spoon. Fry for 2 to 3 minutes on each side, or until each fritter is golden brown and crispy. Work in batches to avoid crowding the skillet.
- Drain excess oil: Transfer cooked fritters to a paper towel-lined plate to drain any excess oil and keep them crispy.
- Serve warm: Serve the corn fritters warm, paired with sour cream, spicy mayo, or a drizzle of honey for added flavor.
Notes
- For a spicier version, add chopped jalapeño or a dash of cayenne pepper to the batter.
- These fritters can be made ahead and reheated in the oven or air fryer to restore crispiness.
- Using fresh corn kernels gives the best flavor, but canned or thawed frozen corn works well too.
- Adjust the seasoning to taste, especially if omitting the cheddar cheese.
