Collagen & Protein Oh Henry Chocolate Bars are a no-bake, high-protein snack inspired by the classic candy bar—featuring layers of peanut butter nougat, crunchy peanuts, and a sugar-free chocolate coating.
Ingredients
- 1/2 cup natural peanut butter (or almond butter)
- 1/4 cup sugar-free maple syrup (like Lakanto)
- 1 tbsp coconut oil or avocado oil
- 1 tsp vanilla extract
- 1/4 cup collagen peptides (or plant-based vanilla protein powder)
- 1/3 cup coconut flour (or almond flour)
- 1/2 cup roasted salted peanuts
- 1/2 cup sugar-free chocolate chips (e.g., Lily’s)
- 1 tsp coconut oil (for melting chocolate)
Instructions
- In a bowl, combine peanut butter, syrup, coconut oil, and vanilla. Stir until smooth.
- Add collagen and coconut flour, mixing until a dough forms. Adjust with more flour if too soft.
- Press mixture into a parchment-lined pan. Press peanuts evenly on top. Freeze for 20 minutes.
- Melt chocolate chips with 1 tsp coconut oil in the microwave, stirring every 30 seconds until smooth.
- Cut chilled base into bars. Dip or drizzle with melted chocolate.
- Freeze again until chocolate sets. Store in fridge up to 5 days or freezer for longer.
Notes
- Use almond flour for a softer nougat texture.
- Make vegan by substituting collagen with plant-based protein and using dairy-free chocolate chips.
