Description

Collagen & Protein Oh Henry Chocolate Bars are a no-bake, high-protein snack inspired by the classic candy bar—featuring layers of peanut butter nougat, crunchy peanuts, and a sugar-free chocolate coating.


Ingredients

  • 1/2 cup natural peanut butter (or almond butter)
  • 1/4 cup sugar-free maple syrup (like Lakanto)
  • 1 tbsp coconut oil or avocado oil
  • 1 tsp vanilla extract
  • 1/4 cup collagen peptides (or plant-based vanilla protein powder)
  • 1/3 cup coconut flour (or almond flour)
  • 1/2 cup roasted salted peanuts
  • 1/2 cup sugar-free chocolate chips (e.g., Lily’s)
  • 1 tsp coconut oil (for melting chocolate)


Instructions

  1. In a bowl, combine peanut butter, syrup, coconut oil, and vanilla. Stir until smooth.
  2. Add collagen and coconut flour, mixing until a dough forms. Adjust with more flour if too soft.
  3. Press mixture into a parchment-lined pan. Press peanuts evenly on top. Freeze for 20 minutes.
  4. Melt chocolate chips with 1 tsp coconut oil in the microwave, stirring every 30 seconds until smooth.
  5. Cut chilled base into bars. Dip or drizzle with melted chocolate.
  6. Freeze again until chocolate sets. Store in fridge up to 5 days or freezer for longer.

Notes

  • Use almond flour for a softer nougat texture.
  • Make vegan by substituting collagen with plant-based protein and using dairy-free chocolate chips.
