- Beat Egg Whites: In a large mixing bowl, use an electric mixer to beat the 2 large egg whites until stiff peaks form. This process aerates the egg whites, contributing to the macaroons’ light and airy texture.
- Combine Mixtures: Gently fold the beaten egg whites into the coconut mixture. Take care to fold softly to maintain the airiness without deflating the egg whites.
- Shape Macaroons: Using a tablespoon, drop generous spoonfuls of the mixture onto the prepared baking sheets, spacing them about 1 inch apart. Press your thumb gently into the center of each mound to create a nest shape.
