Description
Classic potato latkes are crispy, golden-fried potato pancakes that are simple to make and incredibly delicious. Perfect for Hanukkah or any time you crave comfort food.

- 2 lbs russet potatoes, peeled
- 1 medium onion
- 2 large eggs
- 1/4 cup all-purpose flour
- 1 tsp salt
- 1/4 tsp black pepper
- Vegetable oil, for frying
Instructions
- Grate the potatoes and onion using a box grater or food processor.
- Place the grated mixture in a clean kitchen towel and squeeze out as much moisture as possible.
- In a large bowl, combine the potatoes, onion, eggs, flour, salt, and pepper. Mix well.
- Heat about 1/4 inch of vegetable oil in a large skillet over medium-high heat.
- Scoop about 2 tablespoons of the potato mixture into the skillet, flattening it into a pancake shape.
- Fry for 3–4 minutes per side, or until golden brown and crispy.
- Remove and drain on paper towels. Repeat with remaining mixture.
- Serve hot with applesauce or sour cream.
Notes
- Be sure to squeeze out all excess liquid to ensure crispiness.
- Keep latkes warm in a low oven if making a large batch.
- You can substitute matzo meal for flour for a traditional variation.
