Description
A fragrant and flavorful side of fluffy coconut-infused rice brightened with fresh lime and cilantro.
Ingredients
- 1 cup jasmine rice (or basmati)
- ¾ cup canned full-fat coconut milk
- 1¼ cups water
- ¼ tsp kosher salt
- 1 lime, zested and juiced (about 1 Tbsp juice)
- 1 Tbsp finely chopped fresh cilantro
Instructions
- Rinse rice under cool water until the water runs clear.
- In a saucepan, combine rinsed rice, coconut milk, water, and salt. Bring to a gentle simmer, stirring once.
- Cover and cook over low heat until liquid is absorbed, about 12–15 minutes.
- Remove from heat and let rest, covered, for 5 minutes.
- Fluff with a fork, then stir in lime zest, lime juice, and chopped cilantro. Season to taste.
- Serve immediately.
Notes
- Rinsing the rice removes excess starch for fluffiness.
- For more coconut flavor, use coconut water instead of water.
- Leftovers refrigerate up to 3 days; reheat with a splash of water.
