Description

A fragrant and flavorful side of fluffy coconut-infused rice brightened with fresh lime and cilantro.


Ingredients

  • 1 cup jasmine rice (or basmati)
  • ¾ cup canned full-fat coconut milk
  •  cups water
  • ¼ tsp kosher salt
  • 1 lime, zested and juiced (about 1 Tbsp juice)
  • 1 Tbsp finely chopped fresh cilantro


Instructions

  1. Rinse rice under cool water until the water runs clear.
  2. In a saucepan, combine rinsed rice, coconut milk, water, and salt. Bring to a gentle simmer, stirring once.
  3. Cover and cook over low heat until liquid is absorbed, about 12–15 minutes.
  4. Remove from heat and let rest, covered, for 5 minutes.
  5. Fluff with a fork, then stir in lime zest, lime juice, and chopped cilantro. Season to taste.
  6. Serve immediately.

Notes

  • Rinsing the rice removes excess starch for fluffiness.
  • For more coconut flavor, use coconut water instead of water.
  • Leftovers refrigerate up to 3 days; reheat with a splash of water.
