Ingredients
Scale
For the waffles:
- 2 cups all-purpose flour
- 2 tablespoons sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 2 large eggs
- 1 3/4 cups milk
- 1/3 cup vegetable oil or melted butter
- 1 teaspoon vanilla extract
For the cinnamon sugar topping:
- 1/4 cup granulated sugar
- 1 teaspoon ground cinnamon
- 2 tablespoons melted butter
For the peaches & cream sauce:
- 2 ripe peaches, peeled and chopped (or canned peaches, drained)
- 1/4 cup heavy cream
- 2 tablespoons powdered sugar
- 1/2 teaspoon vanilla extract
Instructions
- Preheat Waffle Iron: Preheat your waffle iron according to the manufacturer’s directions to ensure it’s hot and ready for cooking.
- Prepare Dry Ingredients: In a large bowl, whisk together the all-purpose flour, sugar, baking powder, salt, and cinnamon thoroughly to combine the dry elements evenly.
- Mix Wet Ingredients: In a separate bowl, whisk the eggs, milk, vegetable oil (or melted butter), and vanilla extract until well blended.
- Combine Batter: Pour the wet ingredients into the dry ingredients and stir just until combined, being careful not to overmix to keep the waffles light and fluffy.
- Cook Waffles: Pour batter into the preheated waffle iron and cook until the waffles turn golden brown and crisp, then carefully remove. Repeat for the remaining batter.
- Apply Cinnamon Sugar Topping: In a small bowl, mix granulated sugar with ground cinnamon. Lightly brush each cooked waffle with melted butter, then generously sprinkle the cinnamon sugar mixture over the surface to mimic churro flavor.
- Prepare Peaches & Cream Sauce: Mash half of the peeled and chopped peaches in a bowl. Stir in the heavy cream, powdered sugar, and vanilla extract until smooth. Gently fold in the remaining chopped peaches for texture.
- Serve: Serve the warm churro waffles immediately topped with the peaches & cream sauce for a deliciously sweet and creamy finish.
Notes
- For extra indulgence, add a dollop of whipped cream or a scoop of vanilla ice cream on top.
- This recipe is ideal for brunch, lazy weekend breakfasts, or a sweet summer treat.
- You can use canned peaches as a convenient alternative when fresh peaches are out of season.
